Our resident chef Vinnie, has shared another of his mouthwatering recipes below, and this one is Lemon Herb Chicken Thighs
Introducing our delicious Grilled Lemon Herb Chicken Thighs—a perfect summer midweek option that will delight your taste buds!
Ingredients
- 4 boneless, skin-on chicken thighs
- 2 tablespoons olive oil
- Juice of 1 lemon
- Zest of 1 lemon
- 2 garlic cloves, minced
- 1 tablespoon fresh thyme leaves
- Salt and pepper to taste
Preheat your grill to medium-high heat.
In a small bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, fresh thyme leaves, salt, and pepper. Mix well to create a marinade.
Place the chicken thighs in a shallow dish and pour the marinade over them. Make sure the chicken is evenly coated. Let it marinate for at least 30 minutes or up to 4 hours for maximum flavor.
Once marinated, remove the chicken thighs from the dish, allowing any excess marinade to drip off. Reserve the marinade for basting later.
Grill the chicken thighs for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C). Rotate the chicken halfway through cooking for those beautiful grill marks.
While grilling, baste the chicken thighs with the reserved marinade every few minutes to enhance the flavors and keep them moist.
Once cooked, remove the chicken thighs from the grill and let them rest for a couple of minutes. This allows the juices to redistribute throughout the meat.
Serve the Grilled Lemon Herb Chicken Thighs with your favorite summer sides, such as a fresh salad, grilled vegetables, or roasted potatoes.
Chefs Tips
These can also be cooked perfectly on your BBQ if the weather allows!
for a bit of extra kick, add chopped red chilli to the marinade.
For a more “meatier” flavour, we can leave the thigh bone in for you and you can cook in the over for 25 mins.
