Our resident chef Vinnie, has shared another mouthwatering recipes below, and this one is Lambs Liver and onions.
Love it or hate it, everyone has an opinion on eating liver! Personally I think it has a great flavour to it when cooked properly and its a perfect midweek supper that is very quick and easy to cook.
Ingredients
- 225g lamb’s liver sliced
- 15g butter
- 1 onion, peeled and sliced
- 75g smoked bacon diced
- 1 garlic clove, peeled and crushed
- 2 large sprigs fresh thyme
- 1 tablespoon corn flour
- 1 teaspoon balsamic or red wine vinegar
- 300ml boiling water
- 1 tablespoon gravy granules

Method
- Heat the butter in a large frying pan. Add the onion, smoked bacon, garlic and thyme. Cook for 2-3 minutes.
- Season the flour with salt and black pepper and coat the liver.
- Add the liver to the pan and brown for about 5 minutes. Add the vinegar and water mixed with the gravy granules and bring to the boil.
- Serve with a garlic mash and seasonal vegetables.
Chefs Tips
For a more modern take on this classic the you can make black pudding mashed potatoes and braised red cabbage.
These flavours will really enhance the lambs liver and turn a midweek staple into a dinner party centre piece!
