Our resident chef Vinnie, is sharing a great Summer recipe. Beef and Vegetable Stir-Fry
This is a great easy and quick Summer recipe that the whole family will love!
Ingredients
- 450g diced beef
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornflour
- 1 tablespoon vegetable oil
- 1 red pepper, thinly sliced
- 1 orange bell pepper, thinly sliced
- 1 small broccoli thinly sliced
- 1 small red onion, thinly sliced
- 2 cloves garlic, chopped
- 1 teaspoon ginger
- Salt and pepper to taste
- Cooked rice, for serving
In a bowl, combine the diced beef with soy sauce, oyster sauce, and cornflour. Mix well and let it marinate for about 15-20 minutes.
Heat the vegetable oil in a large pan or wok over high heat. Add the marinated beef and cook for about 2-3 minutes until it’s browned and cooked to your desired level of doneness. Remove the beef from the pan and set it aside.
In the same pan, add a bit more oil if needed. Add the garlic and ginger, and sauté for about 30 seconds until fragrant.
Add the sliced peppers, broccoli, and red onion to the pan. Stir-fry for about 3-4 minutes until the vegetables are slightly tender but still crisp.
Return the cooked beef to the pan with the vegetables. Toss everything together and cook for an additional 1-2 minutes to heat the beef through.
Season with salt and pepper to taste.
Serve the beef and vegetable stir-fry over cooked rice. Garnish with fresh basil for an extra burst of summer flavour.
Chefs Tips
For a bit of a kick, add 2 red chilli (deseeded) to the dish before serving
This is a great dish to use any leftover vegetables you have in the week and works well with carrots, brown onions, salad onions or cauliflower.
