Our resident chef Vinnie, is sharing a great Summer recipe.  Beef and Vegetable Stir-Fry

This is a great easy and quick Summer recipe that the whole family will love!

Ingredients

  • 450g diced beef 
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornflour
  • 1 tablespoon vegetable oil
  • 1 red pepper, thinly sliced
  • 1 orange bell pepper, thinly sliced
  • 1 small broccoli thinly sliced
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, chopped
  • 1 teaspoon ginger
  • Salt and pepper to taste
  • Cooked rice, for serving
Method
 
  1. In a bowl, combine the diced beef with soy sauce, oyster sauce, and cornflour. Mix well and let it marinate for about 15-20 minutes.

  2. Heat the vegetable oil in a large pan or wok over high heat. Add the marinated beef and cook for about 2-3 minutes until it’s browned and cooked to your desired level of doneness. Remove the beef from the pan and set it aside.

  3. In the same pan, add a bit more oil if needed. Add the garlic and ginger, and sauté for about 30 seconds until fragrant.

  4. Add the sliced  peppers, broccoli, and red onion to the pan. Stir-fry for about 3-4 minutes until the vegetables are slightly tender but still crisp.

  5. Return the cooked beef to the pan with the vegetables. Toss everything together and cook for an additional 1-2 minutes to heat the beef through.

  6. Season with salt and pepper to taste.

  7. Serve the beef and vegetable stir-fry over cooked rice. Garnish with fresh  basil for an extra burst of summer flavour.

Chefs Tips

For a bit of a kick, add 2 red chilli (deseeded) to the dish before serving

This is a great dish to use any leftover vegetables you have in the week and works well with carrots, brown onions, salad onions or cauliflower.
