Our resident chef Vinnie, has shared another mouthwatering recipes below, and this one is Spicy Pork Chops.
As you will know our Pork chops are taken from the pigs that we have delivered to us each week and are cut thick and plentiful which means you get an amazing flavour. This recipe is the perfect compliment to that and will really bring out the taste, plus its very easy to cook!
Ingredients
- 2 Thick cut Pork Chops
- 1 tablespoon tikka spice powder (or similar)
- 250g new potatoes
- 1 small red onion, peeled and sliced
- 50g baby spinach leaves
- 1 tablespoon tomato ketchup
- 1 tablespoon honey
- 3 tablespoons low fat natural yogurt
Method
- Cook the potatoes for 15-20 minutes or until soft. Drain and set aside to cool.
- Rub the pork chops with 2 teaspoons of the tikka spice. Cook under a preheated moderate grill or prepared barbecue, for 8-10 minutes on each side.
- Transfer the potatoes to a medium bowl. and add the onion, baby spinach, 1 teaspoon of tikka spice, ketchup, honey and water.
- To prepare the spicy yogurt dip, mix together the yogurt and the remaining tikka spice.
- Serve the chops with the potato salad and spicy yogurt dip.
Chefs Tips
For a bit more spice you can finely chop 2 small red chilies and sprinkle on each chop along with the tikka powder.
For a deeper flavour then simply add the tikka spice the night before and leave refrigerated.
You can substitute the Pork Chops for one of our Pork fillets and reduce the cooking time, a slightly healthier alternative.
