Our resident chef Vinnie, has shared another of his mouthwatering recipes below, and this one is Mediterranean-style Grilled Leg of Lamb Skewers
Introducing a great way to use Lamb, Mediterranean-style Grilled Leg of Lamb Skewers—a perfect summer option that can be cooked under the grill or on the BBQ.
Ingredients
- 1 leg of lamb, boneless and cut into bite-sized cubes
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh oregano, finely chopped
- Zest and juice of 1 lemon
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Wooden or metal skewers

In a large bowl, combine the olive oil, minced garlic, chopped rosemary, chopped oregano, lemon zest, lemon juice, ground cumin, ground coriander, salt, and pepper. Mix well to create the marinade.
Add the bite-sized lamb cubes to the marinade and toss to coat each piece evenly.
Cover the bowl and let the lamb marinate in the refrigerator for at least 2 hours, or ideally, overnight to allow the flavours to mature.
Preheat your grill to medium-high heat.
Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece for even cooking.
Once the grill is hot, place the lamb skewers on the grill grates. Cook the skewers for about 3-4 minutes per side, or until the lamb is nicely charred and cooked to your desired level of doneness.
Remove the grilled skewers from the heat and let them rest for a few minutes before serving.
Serve the Mediterranean-style grilled leg of lamb skewers with a side of tzatziki sauce, couscous, or a refreshing Greek salad. Garnish with fresh herbs for an extra burst of flavor.
Chefs Tips
These can also be cooked perfectly on your BBQ if the weather allows!
You can also add some green peppers, red onions, or cherry tomatoes to the skewers for added texture and flavour.
Just make sure to adjust the grilling time accordingly to ensure all ingredients are cooked to perfection.
